Blue Point, Blue Point, New York (Medium)

Flavor Profile -  Blue Point Oysters have a fresh, crisp, firm texture, with a sweet aftertaste that sparkles with salinity.

.Mystic, Noank, CT  (Medium)

Flavor Profile - Beautiful cream and ivory meat, filled with intense brine liquor. Big flavors of minerals and metallic with a rich umami pushing through, but very balanced with a dash of sweetness. The umami lingers on the finish along with the sugars.

Beach Plum, Buzzard Bay, Westport, MA (small)

Flavor Profile - Moderated brine, sweet , soft meats and a lingering stone finish. This oyster has the luxury of being raised in deep waters with a rapid tidal flow, allowing them to grow quickly in long line cages.

When guests order apps to go during the HH time, let them know at time of placing the order that it will be FULL-PRICED.


GUESTS WITH FOOD ALLERGIES


It is a VITAL step in our service to ask all guests if they have any food allergies that we should be aware of. Asking is our way of being in service to our guests and showing that we care about serving them the safest meals to them. All allergies are to noted not only on their open table reservation but also on their ticket when ringing in their food. You are then to let a manager know of the guest with the allergy, which will bring out their food items separately from the rest of the tables items.


FOLDS/HOT TOWELS: When preparing these, please check for stains. If they are stained or torn, DO NOT use them. They should either be thrown into linen bag or thrown away if the hot towels are tattered and torn-looking.







IMPORTANT CORKAGE FEE REMINDER AND CLARIFICATION (UPDATED 10/8/22):

 When a guest brings in a bottle of wine from home, there is NO CORKAGE FEE on THE FIRST BOTTLE.  If the guest brings in more than one bottle, there WILL BE A $30 CHARGE, FOR EACH BOTTLE.

INGREDIENTS: Jalapeno infused tequila, Cilantro simple, Lime, orange bitters

GARNISH/ GLASS: Half rim of smoked salt, 2 slices jalapeno, sprig of cilantro/ Rocks glass

16/20 Key West Pinks Shrimp (with skin on). Served chilled, and tossed in old bay.

Southern Tier Creme Brulee Stout (bottle only): Smooth creamy vanilla custard, with notes of caramel and malt. 10% ABV (goes great with a sugar rim)

Sailfish Sunrise City IPA (can only): Balance of citrus and melon with a strong and bitter hop presence. 7% ABV
