Bread Service Steps
Setting up the Bread Station
Step 1 ~ Salted Butter set up
There should be enough Trays of Ramekins of Whipped Butter to get through the shift check with your managers for the pars on this.
Butter should be kept at Room Temperature
There should be a Label on the Butter Container with a Time Temperature Stamp on it
The Time that it was placed at Room Temp and the Ending Time that it can be held outside of Refrigeration
There should be a container of Sea Salt in the station.
Step 2 ~ Bread Drawer set up
There should be a soup cup in the bread drawer with a damp towel in it to create a steam effect in the drawer so that the bread doesn’t dry out.
Set the Bread Drawer Dial to Number 1

The artisan rolls should be panned up on HALF SHEET TRAYS as shown in the picture Below 4 of each variety on 1 tray
This allows for:
An equal amount of variety to be heated and stored in the warmer drawer
Less bread fired at once will reduce the chances of bread sitting in the drawer for too long to become dry/stale
Bread should be cooked for 5 minutes at 350 degrees
Make the Lavosh
The Lavosh is not meant to be perfect.
It is delicate
It comes in 15 inch round circles
They should be broken into 6-8 large pieces, gently

Standard Issue of bread basket:
1 of each variety ~ The 4 different breads pictured below = Total 4 pieces of bread plus the Lavash Crackers
3 ea large Lavash Crackers
How much bread for the table?
2-4 guests= 1 complete basket
Therefore, a table of 6 would get 2 complete baskets
Yes, a 2 top getting 4 rolls is overkill, however, this portrays the variety and the abundance. This is typically the first thing we give our guests, it should “WOW” them.
Further being a variety pack case, If we put 2 rolls in the basket, we will ultimately be left with more of one than the other and we will sabotage ourselves by the end of the night by having too much or too little of a variety

1 Sour Dough
1 Multi Grain
1 Rye
1 Olive
3 ea Large Lavosh Crackers
Salted butter at the 3 o’clock position
Note, the bread should be placed tallest to shortest from the back:
