CDC’s Sous Chefs, GM’s and Managers: Before a line cook starts on his/her station they must read through the Line Cook Manual and they must get the corresponding workbook printed and handed to them. Their First day of training will consist of writing out their recipes and the workbook is designed to help them through that process. FYI the recipes that are on the line in the Station Line Build books should never be removed from the restaurant. They should always remain in the kitchen/building.
