North Atlantic Salmon - Atlantic Salmon have a milder flavor than wild salmon. The flesh ranges from pink to orange depending upon the amount of pigment added to their feed. The flesh has a medium-firm texture with large flakes and a medium fat content.
Icelandic Cod- mild, almost milky flavor, and firm, flaky texture. It is very much unfishy. Some claim that Atlantic cod is sweeter and more tender, as compared with Pacific cod which is firmer and more savory.
local Mahi- semi-mild and sweet tasting. It's similar to halibut in terms of flakiness, but also similar to swordfish in its denseness.
Mediterranean Branzino- Mild, flaky, and slightly sweet. Branzino tastes remarkably similar to other types of sea bass and halibut.
