KG’s Signature Lobster Bisque

IMG_1236.jpg

Description: A classic lobster bisque made by roasting lobster shells and making a fresh lobster stock. The stock is then strained and added to more fresh roasted lobster shells and vegetables to make the veloute, which is then simmered for hours. The veloute is strained through a fine mesh strainer, then we add the cream and season with salt and sherry. This process takes about 7 hours from start to finish. Served with chunks of lobster. Sherry offered tableside.

*Lobster stock contains lobster shells, fennel, onions, celery, carrots, garlic, cloves, and oranges

*Veloute is our lobster stock thickened with roux

*Sherry is is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain – lobster is a classic flavor pairing

Something Fun: The word “biqsue” is likely a contraction of the words “bis” meaning twice or again and “cuites” meaning “cooked”. Since the standard way to make bisque is to first roast the shells and then simmer them in broth, this accurately describes the soup.
